  4. When the turkey is ready, remove 4 cups from the pan. I use a sauce / fat separator to remove the fat. You can put a measuring cup to wait 5 minutes and remove the fat. Then add the sauce to the sauce. Cook for 30 minutes. Also. Rub the sauce through a fine sieve (this is definitely a job for two). At this point, if the sauce does not taste as good as you would like, you can thicken it at your discretion. I usually add a few bottles of turkey or chicken broth.
